~Comment from Shindo Distillery~
The third release in the CORES series. Building on the Experimental series, the CORES series takes that foundation and elevates it by infusing it with a deeper theme and meticulous attention to detail. At Shindo, we age our spirits in a diverse range of casks, including experimental ones.
Some casks, which we’ve been nurturing for over four years, have finally begun to reach their full potential. For this release, we’ve selected a non-peated spirit aged in new AWO casks as the key malt. Having marked four years since maturation began in new barrels, the spirit now features a prominent green aroma reminiscent of the refreshing and pleasant scents of the forest derived from terpenes.
Building on these newly acquired green aromatic elements, we have blended a total of seven types of spirits—including peated spirit and Mizunara-cask-matured spirit (unpeated)—each with even deeper maturation than in the previous release.
Centered around a sense of sweetness, this expression combines the smoky notes of earth and moss—as if standing amidst the deep valleys and rolling hills of Scotland—with fruity brilliance and a mature, composed character. It is truly a masterpiece worthy of being the latest addition to the Cores series.
~Compostion of cask types ~
Composed of 36% bourbon casks (peated), 24% new AWO casks (unpeated), 12% bourbon casks (unpeated), 14% sherry-seasoned casks, 6% Mizunara, 4% Oloroso sherry, and 4% cognac.
~Tasting Notes~
The refreshing green and vanilla aromas of new oak barrels are blended with fragrant peat, evoking the image of clear water flowing over forest moss. The aroma gradually evolves into pleasant notes of sweet pudding and slightly bitter hojicha.
