江井ヶ嶋酒造於 1888 年成立，有著100多年家族經營歷史，於 1919 年取得威士忌製造牌照，是日本第一個取得威士忌牌照的酒造。酒廠位於兵庫縣的明石市內。江井酒造在 1984 年建立白橡木蒸餾廠，專門製造威士忌，並將其酒品名為「明石あかし」，因為兵庫縣水源清澈的關係，所製造的威士忌入口順滑。由於江井世代經營清酒及燒酌，故其威士忌的蒸餾方法有別於蘇格蘭及其他日本威士忌的做法，而是跟據日本燒酌蒸餾方法改良，保持家族自創的手工精釀風格，口感無比的柔順淡麗。
Eigashima distillery was established in 1888, got the whisky manufacture licence in 1919, is the first Japanese distillery got this licence. Eigashima distillery set up the white oak distillery in 1984, located in Hyogo Prefecture in Akashi City. All the whisky produced by the white oak whiskey called "Akashi". Take advantage of the clear water from Hyogo Prefecture, Akashi produced relatively smooth and sweet whisky. Akashi mainly manufacture Blended whisky, and limited amount of single malt whisky.
With more than 100 years of family history, Eigashima has been a pioneer in the Japanese spirits industry. The distillery is located in Akashi City, where is known as the "beach area" in 19th century. The beach area is producing in high quality rice because of its pure water. The quality of the alcohol is also ensured by the clear water supply. In 1895 the birth of the "Kamitaka" to become one of the most popular brand of sake, Akashi whisky is also due to the special family hand-brewed style, although it is the Japan's smallest whiskey factory, it gets the attention by international.

Umeshu with Akashi Blended Whisky
Plum wine mixed whisky (and other spirits) is an innovative liquor made by Eigashima. Umeshu whisky using 100% fresh Japanese plum, good balance of sweet and sour, with plum wine taste and whiskey finishing, suitable for ice or cold drink. This easy-drink whisky suitable for different gathering and match with varies cuisine.
Kamitake is made from the highest grade rice -"Yamada Kam" rice on the north side of Rokko Mountain in Hyogo Prefecture, where there is a hilly and paddy field with a large temperature difference between day and night. The water is taken from the "West Beach area", due to high acidity and rich flavor, low heat treatment directly before bottling, has a strong aroma, smooth taste , and known as "gorgeous wine."
